THE VINEYARD

Redtail's vineyard is located in Hillier, overlooking Pleasant Bay in Prince Edward County. The site sits within one of Ontario's coolest wine-growing regions, where the lake, the soil, and the changing seasons influence how the vines develop and how each vintage takes shape.

The vineyard is divided into three distinct blocks. Differences in slope, exposure, and proximity to the lake create varying conditions across the property. Each block is observed and managed according to its own character rather than treated as one uniform site.

THE LAKE

The proximity of Lake Ontario helps moderate the growing season. It can soften periods of summer heat and influence temperatures as the grapes ripen.

This cooler environment encourages gradual development, allowing flavour and aromatic character to build while preserving the freshness and acidity that give the wines their balance.

THE SOIL

The vineyard contains a mixture of clay, gravel, loam, and limestone. Together, these soils create varied growing conditions across the property.

Their depth helps balance drainage with water retention. This gives the vines access to moisture during dry periods while allowing excess water to move through the site. These conditions support healthy vine development and fruit with freshness, structure, and a clear connection to place.

THE BLOCKS

Redtail's vineyard is divided into three blocks, each with its own position, exposure, and growing conditions.

The Big Bay block is one of the most distinctive parts of the vineyard. Its natural slope and proximity to the lake create a unique growing environment. Our winemaker considers it Redtail's finest vineyard parcel, and only the highest quality fruit is selected for the limited Big Bay bottling.

Managing the blocks separately allows the vineyard team to respond more precisely to differences in vine development, ripeness, and seasonal conditions across the property.

WINTER

Prince Edward County's winters are a defining part of growing wine here. Once the vines enter dormancy, Redtail uses geotextile materials underneath and protective vineyard blankets to shield them from extreme cold and sudden changes in temperature.

Covering and uncovering the rows is careful, labour intensive work, but it helps protect the buds and canes that will carry the following vintage. At Redtail, the growing season does not end with harvest. Preparing the vineyard for winter is part of every bottle.

GUIDED BY THE SEASON

Every vintage begins with observation.

Weather, rainfall, vine health, ripeness, and the character of each block influence how the vineyard is managed and when the grapes are harvested. The objective is not to force every season into the same pattern, but to respond carefully to what the vineyard provides.

This measured approach continues throughout the growing season. From winter preparation and early vine development to ripening and harvest, each decision is shaped by the conditions of that particular year.

The result is fruit that reflects both the vineyard and the season in which it was grown.
