After hours on a Friday night in the middle of Harvest, we decided to bottle 5 cases worth of partially fermented Pinot Noir and make our first pét-nat. We bottled, fermented, tested and labelled the wine in our makeshift garage office. There are 30 bottles available in our online shop for 24 hours. If you get a bottle, we recommend you store it in your fridge for as long as possible. When you’re ready to drink it, preferably after hours on a Friday night, stand over a sink and open with caution.
