The grapes for Big Bay Pinot Noir were hand harvested between September 27 and September 30 and sourced exclusively from the Big Bay block. This distinctive parcel is considered by our winemaker to be Redtail’s finest vineyard site because of its natural slope and close proximity to the lake. These conditions create a unique growing environment and give the wine a clear sense of place. Only the highest quality grapes from the harvest were selected for this limited bottling. The result is a more concentrated and refined expression of Pinot Noir that stands apart from our regular cuvée.
Then destemmed gently into a concrete tank for fermentation. About 5 days of cold soak before the temperature slowly raise and the fermentation kicks in.
The wine was then aged in neutral French oak barrels for 5 months. This medium élevage time allow to keep the wine focus on a fruit profile. Then we gently filtered and bottle with care on site, at our state-of-the-art production facility.
