2025 brought an abnormally hot and dry growing season; as such, each vine produced deeply rich grapes with concentrated flavours and lower-than-usual acidity. Hand-harvested from the Big Bay and Partridge Hollow vineyards, the 2025 Pinot Gris is made with 100% estate grapes.
Prior to the fermentation phase, the juice was gently stirred once a day for five days prior to increase its natural tropical aromas. Following this process, it was cold-fermented in a concrete egg for four weeks and left to mature for an additional three months before bottling.
Dry at only 7.8 grams of sugar per litre, the estate Pinot Gris is a delicious wine that perfectly balances acidity and fruitiness.
Pinot Gris is bursting with aromas of honeysuckle and apple blossoms, and on the palate, flavours of lemon méringue pie and tart apple juice. Serve chilled on its own, or pair with fresh seafood like oysters and sashimi, chicken oreganata, or mild cheeses.
